This weekend it was my most favourite person in the world’s birthday so I bought a winter special at Le Pommier estate in the Stellenbosch area for an evening stay and breakfast.
What an AMAZING place! It really was a fantastic experience and I would recommend anyone looking for a breakaway to go and stay there! But with this I had to keep the birthday tradition and decide to bake him some Chocolate Mudpie cupcakes. See below for the recipe and some pics of our stay!
100g Lindt dark chocolate
1/2 cup hot water
2 teaspoons instant coffee powder
1 cup brown sugar
2/3 cup plain flour
1/4 cup self-raising flour
2 tablespoons cocoa powder
200g Lindt dark chocolate
1/2 cup (125g) sour cream
Preheat the oven to 160°C and line your muffin pan with paper cases. (12)
In a saucepan over low heat combine the butter, chocolate, hot water, coffee powder. Let the mixture melt and stir until smooth. Remove from heat, and add the sugar and stir to combine. Set aside to cool slightly.
Sift the cake flour, self raising flour and cocoa over the chocolate mixture and stir until combined with a balloon whisk. Now add the egg and mix it in.
Evenly pour the mixture out into the muffin cups and bake in the oven for about 20min. Transfer them to a cooling rack.
To make the chocolate ganache, place the chocolate and sour cream in a heatproof bowl over a pan of simmering water. Stir with a metal spoon for 2-3 minutes or until chocolate melts and mixture is smooth. Remove from heat.
Spread the ganache over the cakes and set aside to cool.
