You have got to try this!! – Seed loaf

These are the most repeated words in my house these past 2 weeks.  After getting this recipe from my flatmate who got it from someone else who got it from My New Roots, I made this loaf of bread twice in two weeks.  That is how much I love it, and everyone else that has tasted it. It deserves all the credit it gets!

It is DI-VINE.  Trust me. So easy to make and so so healthy!! No wheat and no eggs no sugar, which is heaven for me!

1 cup Sunflower Seeds
1/2 cup Flax Seeds
1/2 cup Almonds
1 1/2 cups rolled oats
2 tbs Chia Seeds
4 tbs Psyllium Husk Fibre
1 tsp Coarse Himalayan Pink salt
2 Stevia Tablets (Making it sugar free)
3 Tbs Melted Coconut Oil
1 1/2 cups Water
1 tsp Chilli Flakes

This works really well in any bread pan but a silicone one really works the best for me. It allows you to easily squeeze out the bread when you have to turn it.

  1.  Add all the seeds, nuts, chilli flakes, salt, oats and fibre in the pan.
  2. In another bowl mix the water, coconut oil and stevia and add it to the dry mixture.
  3. Let this stand for about half an hour. Preheat your oven to 175°C (I used a convection oven and it fits in perfectly!)
  4. Let it bake for 20-25 minutes. After that, squeeze it out of the pan straight onto the oven rack and bake it for a further 30-35 minutes until golden brown.

Let it cool, even thought it is really good eating it straight out of the oven!
