Two quick and easy recipes for sweet pomegranate treats

Pomegranate Fudge and Vanilla Ice Cream

  • 1 can condensed milk
  • 1 slab dark chocolate
  • arils of 1 pomegranate

You do:

  • Line a small pan with plastic wrap.
  • Heat the condensed milk and chocolate until the chocolate as melted.
  • Remove form the heat and a hand full of the pomegranate arils.
  • Pour the mixture into the lined pan and gently throw the remaining arils on top of the fudge.
  • Let the mixture cool in the fridge and cut into smallish blocks (it is quite sweet!).
  • Enjoy as is or serve with vanilla ice cream.


Pomegranate Frozen Yoghurt

Pomegranate Frozen Yoghurt

  • 2 cups of plain yoghurt
  • 1 tbsp castor sugar
  • arils of 1 pomegranate

You do:

  • Line a small pan with plastic wrap.
  • Carefully mix the yoghurt, sugar and arils together.
  • Pour the mixture into the pan and put in the freezer for at least 3 hours
  • Enjoy as a more healthy dessert after dinner or as a nice refresher with breakfast or lunch.




Quick notes on pomegranates:

  • Pomegranate seeds are an excellent source of dietary fiber which is entirely contained in the edible seeds.   To keep your digestive system healthy, you need to include fibre-rich sources in your diet.
  • Separating the seeds is easier in a bowl of water because the seeds sink and the inedible pulp floats.
  • Freezing the entire fruit also makes it easier to separate.
  • Pomegranate has potent anti-inflammatory properties.
  • They are also rich in vitamin C, which boosts antibody production and development of immunity.
  • Polyphenolic compounds in pomegranates are powerful antioxidants that can delay the process of ageing.
