“Fast food” for the modern housewife

Everyday life is wonderful but really tough these days…we work hard, play hard and sleep hard! Somewhere in between we have to cook, clean, make some me-time while trying really hard to keep our business growing…that is why I put together these 2 great super quick and easy “fast food” dinners for the modern housewife.

It may not be the most budget-friendly of recipes…but my husband goes “mmmm” with every single bite. I am not blowing my own horn here – simple food, is great food.

“Fast food” chicken and vegetables:

Spray a large oven dish with Spray and Cook. Wash chicken pieces – enough to feed the family. Lay out the chicken pieces evenly in the dish. Dissolve one block chicken stock or one Ina Paarman Chicken Stock Sachet (super convenient!) in a cup of boiling water. Pour over the chicken. Sprinkle the chicken with chicken spice – only the parts not covered. Bake for 45 minutes at 180˚C until the skin is golden brown.
Serve some cooked squash halves (with butter and sugar), pickled baby beetroot and soft boiled potatoes (with cream cheese) with the chicken.

“Fast food” grilled fish and chips

Place your fish fillet (hake or whatever you fancy) in a shallow oven pan. Cover with olive oil and lemon juice. Don’t be shy with the lemon juice…it makes the dish! Season with coarse sea salt and grinded black pepper. Grill for 15 minutes.
Serve some oven baked chips and boiled broccoli and cauliflower with white sauce with the fish.
