Best Mint Chip Ice Cream

Remember the post about AFRIKOA [read here] – the most delicious bean to bar chocolate? Their chocolate story really inspired me to see what out of the box recipes I can try with it.  I stumbled on the best mint chip ice cream recipe ever – yes it is that delicious that I am willing to claim it!

I have been looking for a Mint Chip ice-cream recipe that is egg free and found one recently on baked bree.  I adjusted it a bit (added less sugar, 2% milk and some other things) and gosh!  Now seriously it really doesn’t get any better than this!  It has a delicious minty freshness with just the right amount of chocolatey taste.

I used the 55% Semi-sweet Afrikoa chocolate chips in my recipe and it was just the right amount of bitter & sweet with the mint.

  • 1 1/2 ml Full cream milk
  • 3/4 cup Sugar
  • 3 cups Fresh Cream
  • 1 tbsp Vanilla Extract
  • 2 cups Fresh mint leaves
  • 1/2 cup Bittersweet / semi sweet chocolate Afrikoa 55% Semi-sweet works fantastic!

Ingredients
  • 1 1/2 ml Full cream milk
  • 3/4 cup Sugar
  • 3 cups Fresh Cream
  • 1 tbsp Vanilla Extract
  • 2 cups Fresh mint leaves
  • 1/2 cup Bittersweet / semi sweet chocolate Afrikoa 55% Semi-sweet works fantastic!
Instructions
  1. While heating up the cream add the fresh mint leaves to your pot. Do not let the cream boil. As soon as it is heated turn off the stove top.
  2. Let the mint leaves soak in the cream for about an hour.
  3. Add the sugar and vanilla to the pot and stir until the sugar is dissolved
  4. Add the milk to the mixture.
  5. Pour the mixture into a fridge safe container through a sift to remove all the mint leaves. Squish every last bit of mint essense out of the leaves into the mixture by using a spatula or spoon.
  6. Place the mixture into a fridge for 2-3 hours or overnight for the best results.
  7. Pour the ice-cream mixture into your ice-cream maker and follow your machine's instructions. Churn for about 30-40 minutes.
  8. Melt your chocolate bits in a seperate bowl in your preffered method. I like to just pop it in the microwave until 3/4 are melted and stir it so that everything melts. This helps the chocolate not to form hard pieces.
  9. Now add a thin layer of ice cream to the bowl you will be freezing the ice cream in. Top it with a layer of chocolate whirls like in the picture, and continue making these layers till your ice cream and chocolate is finished.
  10. Put this back in the freezer for 2 hours or until completely frozen
