Coconut Cup Cake

A while ago one of our friends over at My World as a post shared this recipe with me.  I was super keen to try it out, seeing as I have such a sweet tooth and really trying for us to eat healthier.

This is a quick and easy dessert recipe that you can throw together after dinner for a dessert or enjoy it as a late night snack. You only need a few ingredients, and most of them you will have at home!

Some Tips – from my experience of making it:

  • Make sure you stir the mixture quite well.  Otherwise, the baking powder does not dissolve and your mug cake is salty (Trust me on this!)
  • Be sure to add some sweetener like Xylitol, it might not be what you expect without it.

  • 1 Egg
  • 2 tbsp Butter
  • 2 tbsp Boiling Water
  • 1 tbsp Coffee granules
  • 1 tbsp Unsweetened Cocoa
  • 3 tbsp Fine Coconut flakes
  • 1/2 tsp Baking Powder
  • 1 tbsp Xylitol
  • 2 blocks Lindt 80% Dark Chocolate
  • Pouring Cream Optional

  • 1 Egg
  • 2 tbsp Butter
  • 2 tbsp Boiling Water
  • 1 tbsp Coffee granules
  • 1 tbsp Unsweetened Cocoa
  • 3 tbsp Fine Coconut flakes
  • 1/2 tsp Baking Powder
  • 1 tbsp Xylitol
  • 2 blocks Lindt 80% Dark Chocolate
  • Pouring Cream Optional
Instructions
  1. Mix the coffee, boiling water and cocoa in a big coffee mug.
  2. Add all the other ingredients to the mug and mix well.
  3. Put the mug in the microwave on high for 2min 30sec.
  4. When done, immediately pour the cream into the mug so that it gets absorbed into the cake.
