Creamy Spinach and Bacon Roll-ups

I have been slightly addicted to puff pastry the last few months.  It is such a versatile thing!? It happens so often that I just buy a roll of puff pastry on my weekly shopping expedition to store in my freezer just in case of a snack, pie or dessert emergency!

Yep you can use puff pastry for all three of those..even on a braai.  (Remember Suzelle’s Braai pie?) And now you can learn to make these super fancy Creamy Spinach and Bacon Roll ups!

I know it might not be the healthiest thing to make or buy but seriously you only live once..and an emergency is an emergency!

Creamy Spinach and Bacon Roll-ups

  • 1 roll Puff Pastry Thaw the roll of puff pastry completely if you are taking it out of the freezer. (I used the herb pastry)
  • 1 packet Frozen Creamy Spinach mix
  • 1 Egg yellow / milk
  • 1 packet bacon fried in a pan.

  • 1 roll Puff Pastry Thaw the roll of puff pastry completely if you are taking it out of the freezer. (I used the herb pastry)
  • 1 packet Frozen Creamy Spinach mix
  • 1 Egg yellow / milk
  • 1 packet bacon fried in a pan.
Instructions
  1. Shower some flour on a flat surface and roll out the puff pastry a bit.
  2. As per the instructions on the spinach packet heat the mixture until warm and unfrozen.
  3. Pan fry the bacon as per usual cooking.
  4. Spread the spinach mixture out on the pastry not up until the edges. Top it with the bacon.
  5. Cover the entire outside of the roll with either egg-yolk or milk.
  6. Roll the puff pastry place on a baking sheet. (It can also be cut into 1.5 cm chunks at this step.)
  7. Bake for 25-30 minutes at 200*C or until golden color.
  8. Ta-da you've got some fancy shmancy snacks going on!
