February is flying by…just as we like it! I can’t wait for Valentines Day! Some people feel it is overrated – I think it is the perfect excuse to be cheesy, extra sweet and to stay at home!! Who wants to tackle the masses in restaurants if you can have a romantic dinner at home. Starting with this perfectly pink mixed drink! It is as easy on the eyes as it is on the tongue! It is sweet, fizzy and has the correct amount of raspberry to make it super special! Make this drink for your loved one just before settling in for the first course…

Ingredients
  • 125 grams raspberries (Washed)
  • 4 tbsp fine white sugar
  • 15 ml lemon juice
  • 80 ml Gin (The best you have! it is Valentines Day after all!)
  • 500 ml Lemonade (If you prefer it less sweet, use Soda Water)
  • Ice

Instructions
Preparing raspberry syrup
  1. Bring 3/4 of the raspberries and all the sugar and lemon juice slowly to a boil in a small pot. Let simmer while stirring till mixture becomes a bright red syrup.
Mix your drinks
  1. Take 2 glasses, divide the syrup between the two. Pour in half of the gin and the lemonade/soda water in each glass. Be careful of the fizz! Add some ice blocks and fresh raspberries. Enjoy!
