Triple Chocolate Brownies

So seriously what is the first thing you think of making when you have some extra chocolate at hand.. not single, not double… but triple Chocolate brownies!

When Afrikoa sent me their 70% bitter chocolate, 55% Semi Sweet and Milk Chocolate last week I was looking for something to combine all of these into one.  So obviously a triple chocolate brownie came to mind!  I used the 70% chocolate in the mixture to keep it from being too sweet, and used the 55% and milk chocolate by chopping it into chunks and adding it to the mix.

  • 3 large eggs
  • 275 ml caster sugar
Instructions
  1. Melt the butter and dark chocolate together over a pot of boiling water. Or like I prefer to do in the microwave stirring often until just before it is all melted. Leave this to cool to room temperature.
  2. Prepare your baking tin with baking paper cut to the right size. Or I used a glass dish that is oven proof and greased it with some butter / cook and spray.
  3. In a seperate bowl use a sieve and sift the flour and cocoa together.
  4. Chop the rest of your chocolate into biggish chunks by using a sharp knife.
  5. Break the eggs into a large bowl and add the caster sugar. Now you need to whip this into a pale an fluffy consistency which looks almost like a milkshake.
  6. Fold the butter & chocolate mixture into the eggs slowly while continuosly stirring to marry the two. Do not over mix.
  7. Now fold in the flour and cocoa and stir until everything is mixed and a brown mixture is formed. Pour the chocolate chunks in after mixing and stir them in until they are dotted everywhere.
  8. Pour the mixture into you preffered baking dish and pop it into the oven for 25 minutes.
  9. Oh and then after they come out of the oven before they have cooled completely just taste a piece and give yourself a pat on the back! Delicious hey?
